chilli ciabatta

The chilli ciabattas were fantastic. Easy peasy too and they only take a few minutes.

Here's what you do:

Take:

One 410g can of baked beans in tomato sauce
Half a chorizo
1 tsp of chilli pasta (Dutch people - I used sambal oelek)
Four rashers of bacon
1 ciabatta
dollop of tomato sauce

  1. Fry the bacon and then remove from the pan, add the sliced chorizo and the chilli paste and fry for a couple of minutes.
  2. Add the baked beans and tomato sauce and cook over medium heat until thickened.
  3. Split and butter the ciabatta, layer the rashers of bacon over one side, spoon the beans over the top and serve.

You can add some blocks of fresh avocado if you like, but I think it makes these posh beans on toast a bit too posh, plus I can never find a perfect avo when I want one.

YUM!! My hubby would *love* this spicy take on beans on toast. Personally, I'd go ahead and add the avo ;-) But I hear you re. finding a ripe one when you need it. I've come to the conclusion that the only way forward is to pay a premium and buy ready, ripe avos (some of our supermarkets sell these at a premium). Oh, to be in Africa when properly ripe avos were never a problemm...
